Cranberry Bread (Paleo, Gluten-Free, Dairy-Free)

One of my favorite Christmas traditions is making homemade cranberry bread with my mom. I love enjoying it with a cup of coffee or tea. Here’s my healthy version to enjoy throughout the holidays.


Ingredients:

1 1/2 cups almond flour

1/3 cup coconut flour

1 tsp baking soda

1/4 tsp salt

3 organic eggs

1/4 cup coconut sugar

1/2 cup of organic orange juice

Zest of 1 large organic orange

3 TBSP of melted coconut oil

3/4 cup of fresh organic cranberries 

1/3 cups of walnuts (optional)



Directions:

Preheat oven to 350 degrees.

Grease loaf pan or line with parchment paper.

Mix all dry ingredients in a bowl.

Whisk all wet ingredients together in a separate bowl.

Combine all ingredients. 

Fold in cranberries and walnuts. 

Top with walnuts and sprinkle coconut sugar (optional)

Bake for 40-50 minutes until the tester comes out clean.
