Okra! My new favorite snack, appetizer, or side dish! Not a native to the South I never understood the rage around Okra until now.

Thanks to our local organic farm CSA. Each week I can’t wait to get my bag of freshly picked organic okra and roast them in the oven at 350 degrees for 40 minutes with olive oil and Himalayan salt. Not only is okra delicious it contains so many health benefits: a good source of fiber; combats diabetes, kidney, asthma, and high cholesterol; nourishes the skin due to its high vitamin C content ; and a low caloric, glycemic food!

If you haven’t tried okra, it will not disappoint! Most importantly it’s so easy to make.
